HOW WE STARTED MUFFIN LAB

From Brooklyn, NY to San Ramon, CA!

My name is Janneh Merritt! I’m a dad, husband, mentor, and I loooove breakfast sandwiches! I thoroughly enjoy all breakfast sandwiches but noticed a common trend, and it wasn’t good. Breakfast sandwiches were usually on flat, dry pieces of bread, had a runny egg, and some type of protein. There was definitely room for innovation around flavor and style, so that’s where my journey began.

I set out to make a great English muffin, as bread is essential and everything else adds flavor. The fun part was testing different flavor combinations. Once I settled on them, I quickly moved to the BREAKFAST SANDWICH (happy dance). I wanted to create an elevated experience, so I embraced my passion for cooking and challenged the current standard.

I didn’t create Muffin Lab alone. My son and daughter are the best mini assistants, they remain key figures in the growth of Muffin Lab! My wife and mother-in-law are loyal taste testers for the good of the cause.

A little about me! I’m a runner and cyclist, but I wasn’t always a baker. I worked in the tech sector for over 20 years! I recently transitioned into this amazing opportunity to build Muffin Lab, and it’s been an absolute rollercoaster! Nothing like being your own boss!

Muffin Lab has lofty goals, and I can’t wait to see the finish line.
